Sour and Sweet Duck Salad
Sour and Sweet Duck Salad is an exquisite Chinese course which may be also served as a light main course.
Ingredients: 2 heads washed and divided in clusters green salad,
2 finely sliced shallots,
4 chopped green onions,
1 cut in stripes celery stem,
1 cut in stripes cucumber,
125 g bean sprouts,
200 g chopped water chestnuts,
4 roasted and chopped duck breasts,
1 chopped orange.

As a dressing:
3 tbsp fish sauce,
1 tbsp lime juice,
2 pressed garlic cloves,
2 chopped red and green chili peppers without seeds,
1 tbsp brown sugar.
Preparation:

  Here is a Sour and Sweet Duck Salad recipe which is a classic Chinese course.
  At first put salad in a bowl. Add chopped green oions, celery, cucumber, shallot, water chestnuts and bean sprouts. Stir it all. Put it all on a big dish and put duck pieces on the top.
  In order to cook the dressing put garlic, sugar, chili, lime juice and fish sauce in a saucepan. Simmer it all stirring it.
  Sprinkle the warm salad with the dressing and serve it at once decorated with orange pieces.
