5 tbsp soya sauce,
5 tbsp fish broth,
5 tbsp dry white wine,
3 tbsp sweet sherry,

Here is a Salmon Yakitori recipe which is a classic Chinese course.
Peel salmon and cut it in pieces. Then cut the onions too. Hook onions and salmon pieces by turns on 8 wooden skewers.
In order to cook the sauce put all the ingredients in a saucepan and simmer them stirring them.
Then bring it all to boil, reduce the fire and simmer it for 2 min. Sieve the sauce and let it cool.
Pour one part of the sauce in a sauceboat to serve it with kebab, and grease the kebab with the rest of the sauce. Cook it for 10 min on a barbecue grill.
Put the kebab on a dish and serve the course with a sauceboat in order to dip the meat in it.
