||1,2 kg beef,
1 tbsp pearled barley,
1 tbsp potato flour,
1/4 cup sour cream (cream),
1/2 tbsp butter,
50 g macaroni,
worts to your taste.
Here we have a classic English Windsor Soup recipe. So let's start.
At first cook beef broth. Separate knackles meat from its bones, put them in a saucepan, cover with cold water and bring them to boil. When they boil pour off water, cover them with cold water, wash and chop them.
Having covered it with strained broth put worts: parsley, celery, leek, small onion and start boiling it. When it boils put a tbsp pearled barley, 1/2 tbsp butter and simmer it until knackles, worts and barley get soft.
Strain broth, bring it to boil, and when it boils add 50 g macaroni and blend a tbsp potatoe flour in a cup with cold broth.
When macaroni get ready pour blended flour into broth boiling wih macaroni, boil it, then put cooked knackles with worts and add salt and red pepper to your taste.
Before serving put 1 yolk in a cup, add 1/4 cup cream or sour cream and strain it into a cup, then pour soup out, mix it and serve it with chopped greens.
