Tomato Mousse with Cheese
Tomato Mousse with Cheese is a popular English course which is easy and quick to cook. It may be also served on a festive table.
Ingredients: 350 g preserved tomatoes,
1 stripe lemon peel,
1 bay leaf,
1 garlic clove,
20 g gelatine,
65 g white wine,
65 g boiled water,
125 g grated Cheddar cheese,
1 finely chopped shallot,
sugar, grated black pepper to your taste.

  Put tomatoes in a frying pan, add lemon peel, bay leaf and garlic. Grind tomatoes, cover frying pan with a lid, bring it to boil and simmer it for 10 min. Melt gelatine in wine and boiled water, let it stay. Screen tomatoes.
  Then add water, sugar, salt and pepper to your taste. Then add gelatine muddling it until gelatine completely dissolves. Chill the mixture and put it in ice cream bowls or small plates filling them by one third. Let it stay until it thickens.
  Mix cheese with shallot. When tomatoes thicken cover each portion with cheese-shallot mixture. Before serving chill the mousse. Serve it with brown bread.
